Even though I love potatoes, I have been avoiding them ever since I started my low-carb journey. You can find plenty of potato recipes on the blog that I’ve posted over the years.

So when I crave roasted potatoes, I now make roasted radishes. They don’t taste exactly like potatoes, but they definitely don’t taste like raw radishes either.

These radishes make a great side dish for some steak or fish, but also could be served for breakfast with eggs and bacon.

They require a total of 5 minutes prep work and 30 minutes of cooking time.

Radishes don’t really need a lot of time to cook. But they get watery, so I do roast them for longer time, to get them dryer and golden.

It really depends on the size of the pieces – the smaller they are, the faster they cook.

Make sure you have an oven safe dish or baking sheet that could be used at higher temperature in the oven

Preheat your oven to 425F. Roast radishes until golden on the outside and soft on the inside, for 30-40 minutes.
